Oh, am I so happy to finally have a great pita recipe. You see, pitas themselves aren’t hard to make. Most recipes very closely, or even exactly, resemble a standard pizza dough and they’re not much more difficult to assemble. No, the trouble comes when you pop them in the oven and pray for the kind of puffiness you can pop some falafel into and end up with flatbread. Delicious, warm, toasty flatbread, but definitely not a pita. But this works! These babies puffed up like a mouth-watering poori bread in the oven, coming out closer to balloons than pizzas — at last . The technique, which should be 100 percent attributed to Rose Levy Beranbaum’s brilliance, and not my own, puts indiviuals pitas on a searing hot baking stone (or if you’re me, and have busted another one I don’t want to talk about it a cast iron skillet) and bakes them for just three minutes. I found that spritzing the tops with water guaranteed a perfect puff, but really, that’s all there

I have spent the last few months unearthing recipes I’ve had bookmarked for an eternity. A whole lot of them, mostly things I have spared you, did not exactly age like fine wine, as they say; fillings ran, vegetables never caramelized, spiced mixed nuts were grimy and cookies were painfully sweet. Until recently, if you’d asked me if I ever wanted to make falafel at home, I’d have said “sure, one day” but what I meant was “nah, why bother?” I was certain that falafel was fussy to make and had a long ingredient list. It probably related in some way to a fritter, meaning that it was bound with eggs and flour, and probably had breading on it too, all pesky steps and this is even before you get to the peskiest of all: deep-frying them. I figured that it’s one of these things that there as many recipes for as there are people who make it, thus whatever I came up with would be wrong by default – too firm or too soft, with chickpeas instead of favas or vice-versa — no matter what.
